Chai Chocolate Chip Cookies

Makes approx 12-13 Cookies

Ingredients

90g Coconut Oil -(room temperature)

90g Coconut sugar

60g Buckwheat flour

60g Plain Gluten free Flour

2tbsp Water

1tbsp Chia seeds (Ground).

1tsp Baking powder

80g Refined sugar & dairy free chocolate chips

1tsp Cinnamon more

½ tsp Cardamom

½ tsp Ginger

½tsp Ground Black pepper,

½tsp Cloves

¼ tsp Sea salt

Method

 

Preheat the oven to 170°c/325°F/Gas Mark 3.

Add the water to the ground chia seeds, stir and set aside for a couple minutes.

In a mixing bowl add the coconut sugar, coconut oil, and spices, beat together (by hand/hand whisk/ stand mixer). Next add the flours, baking powder, salt and chia seed mixture, beat together gain.

Add the chocolate chips and using your hands bring the dough together.

Divide the dough into 12–13 equal balls. Place on a lined tray and flatten into rounds.

Bake for approx. 11-12 mins, remove from the oven, leave on baking tray for 5 mins before transferring to a cooling rack. Once cool, store in an airtight tin.

Utterly delicious, crispy and crumbly all natural cookies, that are plant-based, gluten and refined sugar free .
