Mocha & Cardamom Coconut Macaroons

Cinnamon Orange Bites

Ingredients

Raw Mocha & Cardamom,Coconut Macaroons

100g Desiccated coconut

0.5 tbs Cardamom

35g Raw Cacao powder /cocoa powder

20g Coconut oil

80g Chicory root syrup

Pinch of sea salt

1 tsp Coffee granules

1 tsp Vanilla extract

Raw Cinnamon Orange Bites

30 g Tigernut flour

20g Ground Almonds

5 g Ground Cinnamon

70g Medjool dates(pitted)

70 g Dried apricots (organic if possible)

Zest of an Orange

1 tsp Vanilla extract

For dusting

2 tbsp tigernut flour
1 tbs Ground cinnamon

Optional extra decoration

10g Freeze dried oranges (ground)
or freeze dried orange powder & Edible gold/lustre dust

Method

Raw Mocha & Cardamom Coconut Macaroons

In a large mixing bowl add the desicated coconut, cacao powder, cardamom and sea salt.

Heat the coconut oil until melted (in the microwave or place in small bowl and stand in a larger bowl of boiling water).

Add the coffee granules and vanilla to the melted coconut oil, stir and then add to the cacao powder and desiccated coconut.

Add the chicory root syrup and mix well until all of the ingredients are thoroughly combined.

On a lined baking sheet, divide the mixture into small equal rounds using your hands or a small icecream scoop.

Put the baking tray into the fridge for 30 minutes. Store in an airtight container in the fridge.

Serve immediately from the fridge. Can be kept in the fridge for 4-5 days. Makes approximately 10.

Raw Cinnamon Orange Bites

Put all of the ingredients into a food processor:the tigernut flour,ground almonds, ground cinnamon, medjool dates (stones removed) dried apricots finely grated zest of an orange and the vanilla extract. Turn the food processor on, it will take about 40-50 seconds for the ingredients to come together and form a thick paste/dough.

Remove the paste from the processor and divide into small equal sizes approx of 12-13g in weight. This will make 16 bites. Using your hands, roll into balls.

In a small bowl add 2 tbs of tigernut flour and 1tbs of cinnamon, mix well. Add each bite individually in the bowl and dust/coat.
For extra decoration; Either dust with edible gold/lustre dust or add together with the freeze dried orange powder in to another small bowl and coat the bites again.

Store in an airtight container in the fridge. Can be kept in the fridge for 4-5 days. Makes approx 16.
